Food Production & Management

Food Production and Management is a pre-culinary instructional course of study/ program that prepares students for employment and/or post-secondary training related to commercial, institutional, and other food industry occupations at entry level. Classroom, instructional, and specialized learning experiences include theory, laboratory, and work experience with products, nutritional values, use and care of commercial equipment, and safety and sanitation precautions.

  • Students learn how to plan breakfast, lunch, dinner, and buffet menus and determine cost and portion control. Students practice their serving techniques in the Warren County Career Center restaurant, The Hill Top. The food service program is a member of the Pennsylvania Restaurant Association.

  • Food Production and Management graduates often pursue higher education in the field of Restaurant and Hotel Management, Culinary Arts, or Chef Training. They may also qualify for advanced placement.

  • Third year students who successfully complete the requirements for the Pennsylvania Food Employer Certification will receive State Certification Act, 3 PA.C.S., 6501-6511 issued by the Department of Agriculture Bureau of Food Safety and Laboratory Services.

  • Professional attitudes will be developed through Skills USA and class activities.

The Food Service Production program at WCCC is designed to give students the knowledge they need to be successful within the food industry, as well as, to help prepare them for post-secondary education.

By taking the fundamentals learned in class and applying them to real-world experiences in the newly renovated kitchen and sit-down restaurant, students can practice their skills in order to be successful in the food-service industry.

Students will prepare a variety of baked goods, pastas and grains, meat and poultry, stocks, soups and sauces, etc.  As students’ progress through the program, they build on the skills necessary to serve food safely and operate in a safe manner that ensures the guest’s experience within the facility is positive. 

While attending Culinary, students will earn nationally recognized certifications as they progress through the program and move into the industry.  Students may also earn college credit and scholarships are available through SkillsUSA.
